Eat This: Tres Leches Cake @ Julienne

It’s entirely possible the best dessert in town is the most deceptively simple. Tres leches cake has gone from a mysterious origin — practically every Latin American country claims its creation, and then there’s an ugly possibility a condensed milk company came up with it to sell its product — to a blanded-out cliché. Chef Justin West rescues it from both its murky and over-familiar history by paring it down to its core delights.

Eat This: Egg-in-a-Jar @ Bob's Well Bread

The deceptively simple “egg-in-a-jar” from Bob’s Well Bread in the sudden foodie mecca of Los Alamos doesn’t even hint at its most spectacular ingredient: the purple potatoes, pureed into a lovely lavender and whipped to a consistency that’s smooth yet still hearty, and then veined with melted Gruyere. Somehow they stay steaming in the time it takes you to eat them — not too hot despite the visual cues but welcoming and warm, keeping the cheese from going globby.

Eat This: Deep Dish Spinach Pesto Pizza @ Patxi’s Pizza


Not to start a food fight, but as an East Coaster by birth, I have to argue deep dish pizza isn’t really pizza. (Sorry, Chicago.) That doesn’t mean it’s not delicious, though. Think of it as lasagna with crust instead of pasta, perhaps. And what thought that starts with lasagna doesn’t end with drooling?
