CA Shindig at the Shore

What could get more California Wine Festival, Santa Barbara edition, held this past weekend, than this view? How much could anyone argue with that?

True enough, there's so much going on--vendor booths hawking clothes, cakes, candles and more, a "Best Tri-Tip in the 805" competition, live Caribbean music from the band Upstream, booths offering beer--its emphasis is almost more on fest than wine. But wine ultimately is all about good times, making memories, enjoying. So the Festival had that down.

Not to downplay the wineries present. The event really does span the state, from Navarro Vineyards in Anderson Valley all the way to a host of wineries from Temecula with a stop at the Tri-Valleys tasting table (that's Livermore, btw), so you could taste all sorts of varietals. It does provide a kind of odd portrait if you hope to make some more conclusive opinions about the vinous state of our state, but there was plenty delicious to be had, from old faves like Navarro and Napa's Cuvaison and Paso's Austin Hope to newer discoveries (at least for me) like Mizel Estate, in the Malibu AVA, or Goldschmidt Vineyards, pouring elegant, built for aging Bordeaux varietals from Alexander Valley and Oakville.

Call me a homer, but of course some of the best showing pours came from right here in Santa Barbara, and I could have happily camped at the Santa Rta. Hills Wine Alliance table, which kept bringing out different wonderful gems as the afternoon went on, from Loubud sparkling to Pinot Noir from Dragonette, Brewer-Clifton, and Montemar. When I wind up turning one down as it's just an SRH and not a Radian Vineyard, well, we are pretty lucky, you know?

The main section of the fest certainly offered plenty for carnivores, what with all the samples for the tri-tip contest right inside the gate (each festival-goer got a vote). Other food was dotted throughout the spaciously laid out area in Chase Palm Park, giving people plenty of room (even if there's always somebody who parks himself--yes, it's generally a dude--at the front of the wine sample line to chat and drink through, folks behind him be-damned). Some you could buy--those cakes at SiSi Cakes sure looked delicious--and some you could sample, as they lured you into a purchase, like the super tasty crackers at Savory Bites

We were lucky enough to score VIP tickets, and that section of the festival offered even more upscale eats, even better, more from Santa Barbara, too. (OK, I really am a homer.) From Blue Owl's fried rice to Finch & Fork's wheat blini with Santa Barbara Smokehouse salmon, green olive, agro dolce, and bachelor button, many a taste tempted. Special credit to Finch & Fork for making something you could just pop in your mouth--people don't think through the ease of eating issues for festivals enough. Sure, it's great be generous, but if half the bigger bite you prepared ends up on my shirt, I won't think super kindly of you, restaurateur.  


That's not to say other food didn't also impress--the faux nigiri offered by Fysh Food was not just scrumptious, but also sustainable (please tell me our oceans won't be empty of fish by 2048), and Rosalynn Supper Club, which I'm probably not hip enough to eat at in LA itself, had two flavor bombs, a scallop with cilantro roasted scallion chimichurri, green Szechuan peppercorn, aged soy, and red chili oil, and a "flank steak" that was actually pork, seared and served with a mix of passion fruit herb sauce, Nam Jim, fish sauce, This chili, mint, Thai basil, and cilantro. Just the full listing of the items should make it clear how wild and rich these offerings were.


To be honest, throughout the festival, the vibe was a bit more LA than SB, with lots of folks so well-dressed and prettified that I joked many were likely to be the next victim on a season of White Lotus. But that's just me being provincial. A fun time was had been a lot of folk. I just assume many of them wound there way to the nearby train station and went south afterward.

A lucky few of us also had the opportunity to continue the party at an after event at nearby winery Skyenna. All thanks to sponsors Sommsation, who helped set up the wine and food pairings at the after-party (as that's what they do), and Hexclad, who also helped sponsor the VIP section and gave the cooks there some beautiful pots and pans to cook with.

House of the Rising Hilt

 

It's only fitting that famed architect Howard Backen gives off a beneficent golden glow, as he's designed so many beloved spaces, from Robert Redford’s Sundance Institute to George Lucas’ Skywalker Ranch, from MGM Studios Theme Park to Meadowood Napa Valley. He's also become a go-to for wineries who want comfort and style shy of outright ostentation, from Cliff Lede to Harlan Estate to, now right here in Santa Barbara, The Hilt Estate. That's not too surprising, as The Hilt's owner, Stan Kroenke, already had Backen design Screaming Eagle for him (even if it's closed to the public), so bringing a favorite architect south made all the sense in the world (especially when money is no object). 

The property recently celebrated its first year open to the public with a to-do featuring Bracken himself, folks from his team, and also many craftsmen and builders from Grassi & Associates, including founder Mark Grassi and partner Paul Niles. The evening was a well-earned love fest for everyone involved, as it's a gorgeous project, managing to provide plenty of space for high-end tasting while still remaining appropriately sized for the property. It doesn't hurt it's one big property, as Rancho Salsipuedes is 3,600 acres nestled into the elbow where Santa Rosa Road meets Highway 1 at the far western end of the Sta. Rita Hills. Only about 200 of those acres are vineyards.

The Barn took the place of old historic barns and mimics them a bit, with wall lumber set about a half inch apart to let the air in. But then you look closely and realize that now everything is screened off, so that flow happens without any buggy accompaniment. Such details abound. Take the two over-sized metal stoves in the two side tasting rooms (which, of course, open to the main room but can be shuttered off if the space needs that)--they provide a kind of hearth that's unique, homey, almost big enough to climb in. You don't just warm a backside in front of one, you get a full-body heat hug.

And, of course, it's an indoor-outdoor space, as this is Santa Barbara, even if one of its more chilly locales, just 13 miles from the Pacific. The wide open side of The Barn frames the low-lying Puerta Del Mar Vineyard and in the distance the Imerys diatomaceous earth mine glitters like a snowy mountain (and hints at the property's own diatomaceous earth that makes the Radian Vineyard such a horrible and therefore wonderful spot to plant grapes). You feel placed here.

Then there's the wine facility itself, which winemaker Matt Dees and his team thought through function first. All the dirty stuff--you know, this is a farming operation--happens outside the building, so it's spectacularly clean inside, even on what turned out to be the last day of 2022 harvest arrivals. There was some water here and there and some activity, but the most unkempt thing in the winery was Dees sporting a true mountain man beard thanks to the demands of the season. The basement barrel room is a football-field long (hey, what is that other thing Kroenke owns?), and you instantly get hit with oak and fruit as you descend the stairs. Dees points out the huge concrete space is sparse enough that if different people figure out a better way to make wine two decades from now, they'll have a blank canvas to begin with. 

Of course the evening also featured a tasting. The wine included The Hilt sparkling, a true beauty of fizz, tension, brioche, pear, and a lean, clean finish, The Hilt Estate Chardonnay (talk to Dees for a bit and he'll passionately convince you Chardonnay is the grape of SRH), almost lets you taste the ocean breeze that whips these vineyards. The Hilt Estate Pinot Noir is a bit more reserved than many SRH Pinot, but that just means it draws you in slowly and seductively to its cherry, spice, and cola. Finishing up was Jonata's Todos (Jonata is the sister property in Ballard Canyon, featuring Rhone and Bordeaux varietals, and now even some Greek grapes--Matt's always experimenting). Todos, as in "all the grapes," is a deep wonder that leads a drinker to much reflection about how full a red blend can be. Only another sip can get you anywhere near an answer.


Of course there was food, too, passed appetizers that never stopped coming, from delicate cheese-bomb gougères to seemingly just-fired arancini to the most adorable and delicious fish tacos that I was tempted to stuff my pockets with, they were so good, but luckily trays of them kept floating about the room so I didn't have to hoard. Thanks, Poe & Co., for the terrific stuff. Of course The Hilt isn't in the business of doing anything halfway, so the food had to be terrific. After all, they flew in a photographer from Sun Valley, Idaho for the gig just because he was their favorite.

Sta. Rita Hills--20 Years of Excellence and Elegance



The Sta. Rita Hills Alliance threw itself a heck of a party this past weekend, as it's been 20 years SRH has been an official AVA--my how time flies when you're making great wine. But even better, it's 50 years since Richard Sanford and Michael Benedict planted the vineyard that bears their names, and fittingly, that's where the Wine and Fire festivities began on Thursday night.

I'm going to get a bit highfalutin here, so hang on, please. There's something holy about that mossy Sanford & Benedict barn. After all, it's not that often you get to stand where something began and by standing there totally feel history in all its effort and magic. Look at that wind whipping the banner in the photo, bringing the Pacific in thanks to Santa Barbara's famous transverse mountain ranges. That it's all beauteous scenery is just sort of bonus, but still. It makes me think of the Brancacci Chapel in Florence, where a young and too-soon-dead Masaccio figured out perspective and then painted some stunning murals that kick-started the Renaissance. Michelangelo would stand in front of these master paintings for hours, tracking to crack the new code. And we sort of know what he ended up doing.

Well, Richard Sanford, fortunately still with us, is our Masaccio, and since several generations of filmmakers have stood in Sanford & Benedict Vineyard and made some of the best Chardonnays and Pinot Noirs California has ever tasted. Many of them were being poured at Thursday's event. Bryan Babcock (more on him in a bit) poured a Pinot from the AVA's first vintage, for instance. Twenty years meant its fruit had faded, of course it was a bit brickish, but the acid life made it clear what a wine it once was.


(And on a crucial side note, that's a cutout of Jim Clendenen, who's spirit infused the weekend. While his winery Au Bon Climat is in the Santa Maria Valley, as a force of nature, friend, teacher, there was no escaping his influence anywhere in the county, and yes, he did make S&B wines that are still sophisticated and delicious.)

Gray Hartley and Frank Ostini were both on hand, regaling the crowd with stories at the Hitching Post table, while taking us on a hop-scotching vertical journey through their S&B's, 2018, '16, '14, '01, 1999. As someone said, "Hey, we're drinking a wine from a different century." But it was all very much S&B, which in general features lip-smacking dark cherry to blackberry fruit, but then something special--a saline hint of that marine influence, some coastal herbal notes (no, not the recent coastal herb crop...), some floral notes. Always complex. An S&B Pinot, for me, is like when you meet someone you find intriguing and they only get more lovely the more you get to know them. 


Again, the oldest vintages were interesting to taste as how often do you get that chance?, but I'd still argue the sweet spot for the wines was eight or nine years, as that HP 2014 and Richard Longoria's 2013 were simply singing arias of Pinot magnificence that night. And it wasn't just the "old" masters of SB winemaking that knocked it out of the park--we also delighted in the very first Dragonette S&B Pinot 2019, a wee but big baby that's worth waiting out, the delicious, light on its feet Liquid Farm S&B Pinot 2018, and two wines from Tyler, who poured both S&B Pinot and a supremely elegant S&B Chardonnay.



And Full of Life Flatbreads kept is happily munching away as we sipped, with their usually fine flatbreads, but also some killer summer-in-a-cup gazpacho and corn served as "ribs." They take a bandsaw to the cobs and then roast them in the pizza oven, serving them slathered with a garlicky aoli. 

Friday we got to attend the sold-out Dinner Honoring the Pioneers of the SRH La Paulee, held at the Alma Rosa Winery. What a group of honorees that was--Wes Hagen was emcee, and he led a pre-dinner panel of  Bryan Babcock of Babcock Winery, Greg Brewer of Brewer-Clifton, Ken Brown of Ken Brown Wines,  Kathy Joseph of Fiddlehead Cellars, Rick Longoria of Longoria Wines, Bruce McGuire of Lafond Winery, Frank Ostini of Hitching Post, and Richard Sanford of Alma Rosa. Everyone reminisced abut Jim Clendenen to start, an emotional, but still often humorous beginning, for as Hagen said after, "We didn't hold a moment of silence because Jim would have hated that." Instead, Joseph recalled his kindness letting her make her second and third vintages at his production facility for free, Sanford charmingly called him a "rascal," and Ostini summed it up by saying, "He always offered us a challenge...Jim was as important as any winemaker in California."

The panel also concluded with the naming of the 2021 Vintner of the Year, Bryan Babcock. Presenting the award, Hagen recalled decades ago when Babcock pulled him aside and said, in contradiction to some press at the time, "This isn't the west side of the Santa Ynez Valley, it's the Santa Rita Hills." And certainly the evening was a proof of that.


For, as you might know, a La Paulee dinner has its roots in Burgundy as a harvest celebration. The feast featured winemakers bringing their best wine both to impress and to say thank you to their crucial community. Things began with lots of sparkling from Flying Goat, Kessler-Haak, Pali, Sanford, and Spear, with Aaron Walker's Sparkling Rosé of Pinot Noir a definite highlight (plus, I got at least this picture!).

Then throughout the meal it sort of came down to what winemakers were sitting nearby as to what wines you got to enjoy. Luckily, we were next to Greg Brewer who shared a wealth of big bottle brilliance, from a 2011 S-D Chardonnay to a 2009 Ampelos Vineyard Pinot. Again, Brewer's wines proved a decade is a sweet spot for SRH wines, so if you have some stashed, drink up. (If you didn't hang on to any, that makes plenty of sense, too.) The honorees/pioneers were pretty good about making the rounds, too, so you got a sip of Babcock, a splash of Longoria, a taste of Fiddlehead, plus Kathy Joseph's story about how she beat rock promoters to the word Lollapalooza. Plus, many fun folks to dine with. (Side note: Wine Alliance, make it clearer you want guests to bring wine too, or drop that maybe they should. And no, I'm not just whining because I did bring a bottle and most other guests didn't.....)

And, of course, there was food, plenty of it, courtesy of the team from the Alisal Ranch led by chef Anthony Endy. Buffet feeding is always a bit tricky, but they pulled it off with aplomb and a lot of red oak--it was a true, classic Santa Maria style feast. But that said, it's always hard to compete with all the wine buzz at an event like this.

At that point I was celebrated out, but there were more events--focused tastings on aging wines, sparkling, and a grand tasting on Saturday at La Purisima Mission. It's been an amazing 20 years for this AVA, and one can only look forward to the next 200. Relishing Something Wild at WOPN

One of the great joys of returning year after year to an event like World of Pinot Noir is you get to reunite with old friends. Sometimes that's a winemaker you only see annually for ten minutes at a tasting in a big Bacara ballroom (hi, Anthony Beckman from Balletto--the wines are still rocking!). Sometimes that means one vineyard served several excellent ways.

Hi, Radian.

Sure, it's hard enough to decide whether you prefer pinots from Santa Maria Valley or Sta. Rita Hills, and it might depend on how your mood or the moon waxes or wanes that day. But it's pretty hard to argue the most singular, spectacular pinot noir coming out of the Sta. Rita Hills of late will have grapes from Radian.

We're lucky that while Stan Kroenke, sad Rams owner, owns the deed--which means the man most in charge of the grapes is winemaker Matt Dees (for The Hilt)--he still knows enough to sell some of the fine fruit to people who will do it more than honorably, winemakers like Bryan Babcock, Ken Brown, Aaron Walker of Pali.

And then there were some Radians to taste at WOPN, too. As is true with his house style, James Sparks of Liquid Farm makes a Radian that's lithe and ethereal--wine happily haunted by its own ghost. Of course, coming from Radian you can't escape the earthiness, an almost muskiness. All that diatomaceous earth--crazy good drainage that makes roots say, "Hey, where did that water go?" yet also, well I'm going to say it again--ghosts. It's fossilized algae, after all. You know, like "Soylent Green is other diatoms!"

So sure, you get the usual Sta. Rita Hills fruit, cherry moving to cranberry to raspberry, but you get it after a good fight on land just-not-quite too close to the Pacific. Lots of intensity, few grapes, better wine. Like the one from Montemar, a garagiste so small their website is just a Facebook page, that only delivers magnificent fruit (they work with Bentrock, too, the partner-vineyard to Radian, but also much more straightforward--in topography if nothing else). A bit bigger and fuller than the Liquid Farm, if you want that (it's hard not too).

And then there's the Radian from Dragonette. Damn. It's a glass of wine that you drink wine for, hoping and not quite finding enough. Brandon Sparks-Gillis poured me my sample, watched my face go stupid with happiness after my taste, and simply said, "It's a magical place." Trying to figure out a way to describe it I've landed on this--it's the girl in Richard Thompson's exquisite "Beeswing," the one with animal in her eyes, the one for which the song's narrator sings, "If I could just taste/All of her wildness now/If I could hold her in my arms today/Then I wouldn't want her any other way."

But let's not get caught up in that feminine/masculine wine reduction, for while Radian is a pretty wine, it's pretty like James Dean. So let's consider the wine also biker outlaw James in Richard Thompson's even more famous "1952 Vincent Black Lightning." A bit dangerous, and therefore glamorous, because, c'mon, we all love the bad boy, the femme fatale. And just as Thompson can finger-pick so much all at once, this wine's got notes up its grapey sleeve for days.

Importantly, these are both songs that tell stories, and someone needs to write the ballad of Radian.

History in a Glass with Richard Sanford

If you may permit me to be fanciful for a moment, spending time with Richard Sanford, the first representative from Santa Barbara in the Vintners Hall of Fame at the CIA in Napa (that's the good CIA, btw), is like spending time with John the Baptist. At this point he's a holy figure people turn to for wisdom; he was the one who announced, before anyone was ready, "Prepare, ye, the way of the pinot" in what would become the famed Sta. Rita Hills AVA; and to be indelicate about, he's lost his head in business a few times. (I don't see how Salome plays into this already over-burdened metaphor.)

So it was a great honor to be invited to spend a media lunch at his El Jabalí Vineyard where he now makes Alma Rosa Wines with head winemaker Nick de Luca, who also joined us for the event. And the few hours made it very clear exactly why his wines are so delicious--because when you drink them, you drink history. "I'm approaching fifty years as a wine grower," he told us at one point, and then half-joked, "It scares me." But then he put his El Jabalí Vineyard into such a long context it seemed like a story torn from a James Michener novel. He told tales back to the land grants, but mostly from the 1970s on when he arrived in Santa Barbara County after his time in the Vietnam War and turned to the land and farming for refuge and peace. "In the 1970s you could still dry-farm garbanzos here and it would have made sense," he said, "but not anymore--the land's too expensive."

So instead you have the beautiful growth of these 37 year old vines.

Getting to chomp on some of the grapes you taste why the wine is so delicious--the flavor is all there waiting already. (The grapes were less than a week away from getting picked.) "The leaves are turning just at harvest," Sanford pointed out. "That's what they want. Chemically forced vineyards are too happy. Nature wants the plants to settle down."

He and de Luca were particularly proud of their shift to the Simonit & Sirch method of pruning, an Italian system that is much more precise and delicate than most typical U.S. pruning regimens. "All the pruning removes outer shoots, so we don't interrupt the sap flow," he explained. "The lifespan of vines is greater pruned this way. And with age, you get an elegance to the wines."

Of course, in addition to discovering this most delicate of pruning systems, Sanford has been farming organic before anyone thought to make it a marketing term. Part of that was a desire to be very kind to the land after the horrors of a war that thought napalm was a wise weapon, but it was Richard's wife Thekla who made the push. "It took two years, and we had to be innovative," is how Sanford describes the process, telling a story of the vineyard crew blasting bugs off the vines with flames, not poison, during one infestation.

Add it all up, and de Luca points out, "When we have healthy grapes, we can use little to no sulfur." He quickly insisted, "But we're not making natural wine. It all comes down to hygiene. If I knew I was going to have a major surgery, I'd want it on the floor of winery."

Just to focus on two of the enlightening wines shared with us that afternoon, I'd like to write about the 2011 and 2016 El Jabalí pinots. The older wine was aging well under screwcap, for as Sanford insisted, "It's a wine of the people." He delighted in the "forest floor that develops with age" and the translucent color, citing Michael Broadbent telling him, "Richard, you sohuld be able to read a newspaper through a good Burgundy." Turns out the news you can read through it is a review praising its grace and still plenty of fruit seven years after release. Sanford accurately said, "There's a lyrical quality to these wines that lasts," and then he slowly drew his hands apart to emphasize his point. Meanwhile the wine slowly set out taste buds at attention.

The just released 2016, on the other hand, was ridiculously delicious given its youth. de Luca said El Jabalí was always their most tannic wine, so they massaged it with oak. He shared a line from a French friend about barrel-aging, "If the wine is so good, why are you afraid?" Alma Rosa isn't, so this pinot gets up to 50% new French oak, but it's integrated well, helping with structure but not tasting like you've bit a barrel in the least.

Oh, and if you're going to be drinking wine this good, you better have suitable food to match. Fortunately the lunch was catered by First & Oak, with Executive Chef JJ Guerrero himself making our meal. Here's the main, a breast of duck (my guess would be sous vide first, then pan-roasted?), with English peas, charred romaine filled with mustard seed so it seemed to be a whole new plant, pearl onion, gnocchi, and a mint velouté (you know, one of the mother sauces).

We're pretty lucky to live where we do, you know.

Sushi Gets Along Swimmingly with Star Lane

If you're like me, dear reader, when it's 4 o'clock you have this struggle--what in the world do I want for dinner? And when you figure it out, at 4:30, you're all proud of yourself. You have a plan.

Let me introduce you to the world of the Dierbergs, the family behind Dierberg Star Lane. They've got a 250 year plan.

Now, we could all feel embarrassed about our lack of future thought, or we could have a glass of one of the many fine Dierberg/Star Lane wines and contemplate the future in a more pleasant place. I vote for that plan, and would do so for 250 years, if I only could.

The Dierbergs have managed to buy some of the most wonderful wine-growing property Santa Barbara County has to offer, from the Dierberg Vineyard in the Santa Maria Valley to the Drum Canyon Vineyard in the Sta. Rita Hills to the Star Lane Vineyard in Happy Canyon. Add those three prime locations up and even someone with no wine knowledge could stumble upon some good pinot, chard, sauv blanc, and cab. But, of course, you don't kick off a 250 year plan with a someone as your winemaker.

Nope, the Dierbergs hired Tyler Thomas, stealing him from the more famous wine counties up north, which shows a certain sense of commitment. Thomas has one of those stories--French grandmother, wine at the table, college years studying botany and getting into cooking. Then, after marrying young, he and his wife traveled the world, only to land in New Zealand and discover winemakers. It seemed like a cool career.


Fast forward through a Master's from Davis (viticulture and enology) and an ornery mentor, Mark Matthews, author of Terroir, and Other Myths of Winegrowing, with whom he didn't always see eye-to-eye, and that feisty back-and-forth made him a better winemaker. For as Thomas puts it, "In wine school, you tend to learn how to do stuff to wine, and that's not always good."

He got practice learning not to do too much at Hyde de Villaine in Napa and Donelan in Sonoma, but the Dierbergs came wooing, and once he saw the properties, and heard of their desire for a long-range plan, he couldn't say no. So now they get to do things like plant all sorts of clones to see which grow best ("it takes 25 years to see what clones work on your site"), and to experiment with stem inclusion (he's a fan, in moderation), and to age in oak vs. maloactic fermentation to find what creates more "body," and to see what different barrels can do, and to grow grapes at different elevations (thank you, rising Happy Canyon topography), you name it.  If there's a best way to make a wine, Thomas and his team will find it.

In addition to the magnificent sites to grow the grapes in the first place, and that they've even got 15 acres of own-rooted vines in Happy Canyon (did I mention they have 40% of the planted acreage in that Bordeaux-blessed area?) since it's protected enough from phylloxera (plus they have to water less, and the flavor profiles seem more classic, with richer textures), they've got a half acre of caves to age the wines in perfect conditions. There's something nearly religious about a place like this, as if you can feel the growth and change about you amidst the silence of the barrels.

They're also after perfect pairings, so let a bunch of us heathens, uh, journalists, in for a tasting with Chef Kiminari Togawa from Sushi Karaku in Tokyo. Alas, I have not been to Japan, so don't know the culinary highlights, but a family came from Japan to this event as they like Togawa so. That's dedication. (Here I go with my limited knowledge, but they sort of looked like a couple from Tampopo.)

The point was to prove you can have red wine with fish. It helps that Togawa does Edomae sushi, the older version that has been pushed aside by what we now know of as sushi (but that's only 50 years or so old). That means fish that's pickled, marinated, even sometimes slightly quickly cooked, yet still sushi. You don't dip this into soy and wasabi, as it's got all its proper flavor pre-packed, as it were. It looks like simple nigiri, but my god, do those flavors last and last--one way it certainly works with red wine, as it finished as fine and long as a delicious cabernet.


Take the pickled red maduro (tuna red meat) in soy alongside the chu-toro (fatty tuna) sprinkled with wine salt (photo above). The maduro glistens for a reason, hinting at its richness. It almost had red beets depth, and sure enough their handy flavor profile matching chart nailed the fish's iodine and iron core. Then the wine salt on the chu-toro excellently bridged sea and grape in one tasty bite. These two paired so well with the pinots, one from Santa Maria--the 2014 Dierberg Vineyard--and the other from Sta. Rita Hills--the 2014 Drum Canyon. Guess which one had more salt air, to match? You see how this can be, done, don't you.

Of course, there was even more, brilliant non-sushi bites between the courses, like a king crab mille feuille that had no pastry, but lots of crab, plus bonus salmon because why not, and then that rich zip of spinach for both color contrast and earthiness.


Or this modestly named oil marinated salmon with tomato water, that somehow left out the salmon roe atop that gave the dish a crazy series of bright bursts.


So does sushi go with red wine? You bet. And I'm pretty sure it would even not in a stone cellar setting, made by a chef flown in from Tokyo for the event, with wine poured from a producer with a 250 year plan. (How did I not get to the mirin marinated conger eel and the 2011 Star Lane "Astral"? Was it because I gave up on notes and was reduced to grunting with pleasure?)

Margerum Rapporte Pinot Noir Sta. Rita Hills 2014: Doug Margerum’s desire to honor his recently deceased dog, Patches, and create a project to help all animals led to this young, tasty pinot noir. 
Sourced from primo Sta. Rita Hills vineyards, including Radian, La Encantada, and Sanford & Benedict, and blended with the help of Whole Foods wine specialist Gina Cook, the wine has a bit of bite on first opening the bottle, but how fitting is that?

Bryan Babcock's Revolutionary Farming is Making Some Fine Pinot

It's mighty easy to go along doing things the way people before you did things. After all, you figure they knew something. Plus if you do something differently and it doesn't work, everyone's going to say, "Why didn't you do it the way we all did?"

Add it all up and innovation doesn't come easy. But that hasn't stopped Bryan Babcock. Not to take all the thunder out of the story, but as the owner of Babcock Winery & Vineyards in Santa Barbara's premium Sta. Rita Hills appellation, he was on a James Beard Foundation list of Top Ten Small Production Winemakers in the World.

Send in the Clones


You know it's gone past drinking to deep thinking when a winemaker on a panel says, "It's actually a cultivar, not a clone," and you don't hear a single snore. Of course, this serious moment came after an introduction by wild wit Peter Cargasacchi to the Sta. Rita Hills Winegrowers Alliance Wine and Fire Symposium's Pinot Noir Panel on Clone 115M that began, "Now that Area 51 has been declassified, we can tell you a little bit about Clone 115," and ended, "If I told you any more I'd have to kill you."

A Lot to Say about Chardonnay



While the AVA of Sta. Rita Hills might only be a decade recognized, it seems like a center of the winemaking world when longtime giants Ken Brown and Richard Sanford are sitting next to each other on a panel about chardonnay from the area. Brown, Zaca Mesa's first winemaker in 1977, and founder of Byron Wines (which he sold to Mondavi), is talking about one of the AVA's newest vineyards, Rita's Peak. Sanford, planter of the ur-area vineyard Sanford Benedict in 1971 and now owner of Alma Rosa, is dropping tidbits like "it was called pinot chardonnay at that time" and extolling the virtues of his Rancho El Jabali. (Not surprisingly their wines, to my palate, are the two best of a very high quality tasting.)
